WOW what an incredible fall break spent in Morocco, Africa with Bus2Alps. We've done a few of their trips and Olivia and I decided to book their one to Marakesh for a whole new experience.

I don't think I'll ever look at the world the same way again. It was AMAZING! We got to ride camels, go on an ATV tour, have a traditional Hamam bath, try new foods, shop & more. Sharing all the fun per usual with you.

I stayed in a Village of Morocco with amazing local people and experienced something which happens in Africa but most of the people don't know about it. I celebrated the Biggest festival of Morocco with the entire Village and witnessed their wonderful hospitality.

Staying with this Amazigh family was a highlight of my time in Morocco. The Berbers - locally they prefer being referred to as the Amazigh people - are a North African community with their own culture and language: Tamazight. The family I stayed with isn't necessarily representative of the Amazigh community at large, but they are part of a sizeable community of people who live in the Atlas Mountains, far from the busy and vibrant cities of Morocco.

Marrakech is located in the center of Morocco. With its vibrant colors, buzzing atmosphere, mix of tradition and modernity, and aromatic smells, it’s a city like no other: Marrakech truly stimulates all your senses at once.

The medina is the heart of the Marrakech, packed with shops, traditional houses called “riads”, restaurants, and many of the historic sites.

9. Try the traditional local food
Some staples you have to try include couscous, meat brochettes, and the most iconic dish of all: tagine.

8. Visit the Saadian Tombs
The Saadian Tombs are a 16th century burial ground of the Saadian dynasty, which ruled over Marrakech between 1524 and 1668.

7. Find peace at the Majorelle Gardens
Located in Marrakech’s new town, these lush botanical gardens are filled with cacti, palms, and other colorful trees.

6. Stroll around Mellah Jewish Quarter
There are still a number of Jewish places here, including the Lazama Synagogue, the Miara Jewish Cemetery, and the Spice Market.

5. Get lost in the souks
What makes the souks in Marrakech remarkable is the wide variety of exotic items you can buy, such as babouches, lanterns, ceramics, carpets, and leather goods.

4. Check the ruins of El Badi Palace
The Saadian Ruler Al-Mansour who was buried in the Saadian Tombs built this grand palace in the 16th century.

3. See the beautiful Bahia Palace
After El Badi Palace, it might be interesting to see the contrast with the beautiful Bahia Palace, which was built in the late 19th century.

2. Go on a day tour to the Ouzoud Waterfalls
With a height of 110 meters or 360 feet, these are the tallest waterfalls in the country. A day tour from Marrakech includes a hike down to the river, do a short boat ride to get closer to the falls, and hike up again.

Torborgee (pronounced Toy - Boy - Gee)
Torborgee is a spicy, bitter, thick palm oily Liberian stew made variety of ways; beans torborgee, bitterball torborgee, kittilay torborgee, water greens torborgee, fever torborgee, etc
The dish is often enriched by a specific oil called torborgee oil and of course the addition of dried meat, chicken, pork, fish, or whatever you decide to add to your meal. This meal comes from the Lorma ethnic group of Liberia. There are 17 ethnic groups! The diversity of Africa is endless and food is truly a blessing. I love that on this channel can bring many different African dishes that you can learn and enjoy. Let’s get ready!

INGREDIENTS

• Variety of fish and meat of your choice.
• 8-12 hot pepper (spicy) or less (if you’re not into hot and spicy food )
•Torbogee Palm (2 cup)
• Bitterball and kittilay ( 2 frozen bag of each).
• Onions ( 1).
Half Tsp of soda


SEASONING
• 1 Tsp of salt
• 1 Tbsp black pepper.
• 1 Maggi crevette shrimp/ chicken buillon or maggi star crayfish/ Nigerian maggi.
• 1 Knorr cube.
• 1 Tbsp of badia complete seasoning.
• 1 Tbsp of lawry’s all purpose chicken seasoning.

Tip: Try to divide your seasoning in half; half for prepping and the other half for making the soup. This way you get to keep track of it and ensure you don’t exceed the required amount.

Let’s get into the cooking:
Wash all meat/ fish thoroughly.
• Boil for 30-40 mins
• Boil frozen bitterball & Kittley, wash, put in pot, add onions and hot/ spicy pepper in and boil for about 20 minutes.
• Blend them together
• Put blend bitterball and kittley back into the pot and add a cup of water and the rest of your seasoning
• Add variety of meat/ fish
• Add in 2 cups of turborgee oil
• Mix well and cook for another 10-20 mins.
Turn off the stovetop and add in half tablespoons of soda and stir again.
Your torbogee is ready to go.
As always, remember you can get better in the kitchen with constant practice. If you don’t get exactly what we made here the first time, keep trying until you do. Practice makes the food better!
