Shining the Spotlight on Linda Bezuidenhout
Linda Bezuidenhout (LB) is a fashion designer who is based in Atlanta, USA. Linda has been involved in fashion industry for over 20 years, in Africa, Europe and the USA. The LB line is influenced by a wide range of world fashion, cultures and trends.

Linda comes from a Dutch-Tanzanian background and has been influenced with fashion since the age of 8 when she used to insist on designing her own holiday & special occasion clothes and have local tailors sew the dresses. As a teenager she lived in several different countries in Europe which developed her fashion vision and exposure. In her 20′s she moved back to Africa (Tanzania) and continued contributing to the fashion scene there as a top beautician with involvement in various beauty pageants in conjunction with some of the top African female singers such as M'bilia Bel & Vivic Motuwa. In her late 20′s she moved to USA and got involved in the men's world of fashion as well and owned several menswear stores in different malls in the US.

Tanzania's 60 year independence anniversary was the central theme at the 14th edition of Swahili Fashion Week held in the country's commercial capital of Dar es Salaam. The three-day fashion extravaganza brought together fashion and accessory designers from the East and Central Africa region and beyond. CGTN's Daniel Kijo with more.

Mwanza is a port city on the shore of Lake Victoria, in northern Tanzania. It's ringed by green hills. They city is known for unusual rock formations like Bismarck Rock, near the Kamanga Ferry Terminal. In the center of town are colonial buildings like the crumbling hilltop Dr. Robert Koch's House. The 1935 Indian Public Library, mosques and Hindu temples reflect Indian influence. The Makoroboi area is full of shops.

SAMOSA FILLINGS
Minced beef 1 cup
oil 1 tbspn
salt 1 tsp
1|2 carrot
1 medium onion
1 medium green pepper

SAMOSA POCKETS
2 cups of floor (all purpose flour)
1 tsp salt
water (enough)

Swahili Fashion Week first edition in Dar es-Salaam, Tanzania - November 2008

Beef Pilau

Ingredients:
1/2kg Beef
2 cups of Rice
3 cups boiling water
Pilau Masala
1 large Onion
Ginger & Garlic Paste
Salt
Cooking oil.

Method:
Start by preboiling your meat.
Fry your onions till golden brown.
Add your ginger & garlic paste and fry but don't let it burn.
Add in your whole pilau masala.
Add your preboiled meat and fry till brown.
Add the salt and your tomato paste and mix well.
Add the rice.
Add your boiling water and let it boil until the water reduces.
Reduce the heat, turn your pilau and cover tightly
Let IT cook perfectly and dry out
Serve with kachumbari

Ugali is a Kenyan Staple that is a mixture of water and maize flour/meal that's cooked until firm. You need a wooden spatula when cooking and a pot that's not non stick.

Ingredients:
2 cups Boiling Water
2 cups Maize meal
(Have 1/2 cup extra of hot water incase you need to make the Ugali softer)
