Here is my recipe for the Nigerian Cake (Pound Cake)
Ingredients
4 Cups of all purpose flour
10 Eggs
4 sticks of Butter (2 cups of Butter)
1 Tbs of Vanilla extract
2 cups of Sugar
1 Tbs Baking powder
1/2 Teaspoon Nutmeg
1/2 cup of Milk (or dissolve 4 Tbs of powdered Milk in 1/2 cup of Water)

Notes:
I know many of you will wonder (especially my 9ja folks ) why I creamed my butter and Sugar for just 5 minutes. You seriously don't need to over cream the mixture otherwise the resulting batter will be too dense and you might be seeing some gluey steaks inside the cake and we know that happens to most of us.

If you are using the hand held mixer then your creaming time will be around 5 to 10 minutes on a medium speed.

Here are some other important things to note:

Be careful of over beating the bater after the dry ingredients have been added especially when using the kitchenaid mixer. If you don't trust your mixer then it's better to gently fold the Flour into the cream with a spatula.

Try not to open the oven until the cake is about done (about 80% done) because this drops the temperature of the Oven and it will affect the rising of your Cake

Make sure you pop the bater in the oven immediately you pour it in the Pan or else the air created in the batter will escape and the cake might not rise well in the Oven

If you decide to make half of this recipe or split into 2 baking pans then your baking time will be about 45 minutes to 1 Hour

Cake Pan size 8.5' x 3.6' (21.6cm x 9.3cm)

At least 42% of adolescents in Sub Saharan Africa are into substance abuse, the UK’s BioMed central reported. In Ghana, illegal use of tramadol and marijuana among the youth is high. Although Ghana’s drug policy forbids the distribution of such illicit drugs, they are the most accessible. Many drug addicts are seeking refuge in the forest during the day. Experts warn the country could face challenges if the trend continues. DW Maxwell Suuk has been speaking to some of the young addicts who blame unemployment for their addictions.

Sugarcane farm. Best investment in modern agriculture sector. Sugarcane crop thrives best in hot sunny tropical areas. Areas with high rainfall or good irrigation are best suited for sugarcane cultivation. Sugarcane can be successfully raised on diverse soil types ranging from sandy soils to clay loams & heavy clays. However, a well-drained, deep, loamy soil is considered ideal for sugarcane cultivation. Sugarcane is propagated primarily by the planting of cuttings. The lowest temperature for good cane-plant growth is about 20 °C. Sugarcane requires regular irrigation at different stages. Harvesting and milling begin in the dry, relatively cool season of the year and last for five to six months.

Crochet is a passed on skill in The Gambia, given to the next generations from mothers, grandmothers, aunts or any other relatives and also from teachers to their students in school. Crochet is a process of creating things using two basic materials: a yarn that varies in size and colour and a hook that comes in different sizes and lengths.

The hook can be plastic, metal, aluminium or wooden. Tools such as scissors, measuring tape, needles and thread help in the process of making designs. Some of the most common products made from crochet are bags, clothes, shoes, scarfs, caps, blankets, headbands, different accessories, yet, with creativity added to it, there is little limit of what else can be done by this technique.

Wrapper offers comfort and creates free movement for women. Women will always wear wrappers when doing household chores. They will also use the wrapper to strap their children on their backs while working. Strapping a child on the back with a wrapper is believed to make them blessed and strong when they grow up. It is also a form of protection for the child against evil spirits. It is said that when a woman carries a child on their back, no wicked eye can cast evil on the child.

Gambians use a popular saying when they want to let a person know not to take them for a fool, and it goes like this; ˝My mother did not strap me on her back with a tissue pepper˝. This saying has a lot of meaning attached to it. It shows that a child was well protected by their mother, and the mother has never allowed the child to be exposed to danger. It also shows that the child, even when they grow up, the blessing of wrapper still follows them.
