Today I tried some Djiboutian Food. I made some Kashata which is a Coconut and Peanut Sugar Candy eaten in this East African country and many others in the region. It’s kind of like peanut brittle but with a coconut flavour. #shorts #djibouti

I didn’t have peanuts so I added almonds instead and the result was a deliciously sweet treat!

Ingredients
⁃ 1 cup of raw peanuts (or raw almonds)
⁃ 1.5 cups of sugar
⁃ 1/2 cup of coconut milk
⁃ 1/2 tsp of cardamom powder
⁃ 1.5 cups of desiccated coconut
⁃ a pinch of salt

Method
1. Roast the nuts until they give off a delightful smell before setting aside
2. Add sugar, coconut milk and cardamom powder to a pan and stir continuously over low heat until the sugar melts
3. Once the syrup comes to a boil, add the desiccated coconut and nuts and mix well
4. Pour the mixture out onto a tray lined with baking paper
5. Top with a pinch of salt
6. Let it set in a cool place for about 1 hour
7. Cut and enjoy!
