I like to think that I know a lot about all of Africa and even its Foods. One of the greatest mistakes you can ever commit is to only experience a country's cuisine in a Hotel or Top restaurant. That's Error No 1. You feel good but it's 100% inaccurate.

That error has prevented the richness and authenticity of African dishes to travel across countries in Africa and the entire globe itself. Probably true for other continents as well.
