Jollof rice:
Ingredients
For the chicken
* whole chicken( cut up)
* Handful of onion
* Half thumb size ginger
* 3 garlic gloves
* 1 tablespoon thyme
* 1 tablespoon curry powder
* 2 teaspoons salt
* 3 crushed chicken bouillon cubes (1½) teaspoon
*1 cup water

For the tomato sauce:
* 5 tomatoes
* 2 large bell peppers
* 1 scotch bonnet pepper
* 1/2 small onion

For the rice:
* ¼ cup oil
* Handful of chopped onion
* 6oz tomato paste
* 2 cups tomato sauce
* 2 teaspoons salt
* 2 teaspoons crushed chicken cube
* 1 teaspoons thyme
* 2 teaspoons curry powder
* 4 cups raw rice
* 2 ½ cup chicken stock.
* 2 cups water.
