How to Cook Sukuma Wiki or Collard Greens with Ugali! Simple and Easy Kenyan East African Recipe!
Ingredients 🥬
1 large bunch of sukuma wiki (kale) washed and cut
2 tbsp of any vegetable oil
1 medium size chopped onion
1 large size chopped tomatoes 🍅
1 tsp of salt to taste 🧂
1- 1/2 cup of maize flour
2 cups of water 💧
1 tbsp of salted butter (optional)
Method :
Sukuma-wiki:
Heat oil then add onions and cook till translucent.
Now add the chopped tomatoes 🍅 and salt and cook for few minutes.
Add the sukuma wiki (kale or collard green) and cook till soft.
Serve with ugali.
Ugali (soft maise):
Boil water, add butter and then add the maize flour in one or two portions.
Stir continuously till it cooks and comes to a thick dough kind of consistency.
Serve with Sukuma Wiki and enjoy ☺️
