INGREDIENTS👨‍🍳
Black eye beans - 2 cups, washed and peeled
Water - 1 cup
Tomato - 1, chopped
Yellow onion - 1, chopped
Habanero chili - 2, chopped
Tomato paste - 2 tbsp
Vegetable oil - ½ cup
Chicken stock - 2 cubes, crushed
Salt - ¼ tsp
Salmon - 500 g, cubed
Spring onion - 1
Parsley - a bunch


PERSONAL NOTE ✒️
Oleleh is a very popular savory black-eyed bean pudding in many parts of West Africa. I made it with salmon, but this recipe can easily be adapted to a vegetarian version. This is a mouth-watering dish with a rich flavor. It is also super easy to make as it does not require a lot of prep work. I used 2 habaneros because I like it spicy, but you can adjust to your taste. Oleleh is a pretty healthy dish, but at the same time substantial and filling. My family thoughtfully enjoyed this dish - 😋 Highly recommend!
