EAST AFRICAN CHICKEN BIRYANI RECIPE by EVERYTHING BUT PASTA (RECIPE BELOW!):

I N G R E D I E N T S :
For the marinade:
3 Chicken breasts, cut into 1 in cubes
2 tsp each of ginger and garlic paste
1 tsp salt
Generous pinch of saffron

For the Sauce:
3 tbsp cooking oil
4 cloves
2 cinnamon sticks
5-6 cardamom pods
1 tsp each of ginger and garlic paste
Generous pinch of saffron
3 medium tomatoes, blended
4 tbsp tomato paste
2 medium potatoes, diced and fried
4 medium onions, sliced thinly and fried (optionally you can use store bought fried onions, about 1/2 cup)

Rice:
1 1/2 cups rice, washed and soaked for 20-30 mins
1 tsp lemon juice
2 cinnamon sticks
4-5 cardamom pods
1 1/2 tsp salt
2 tbsp oil
Orange or Yellow food colouring, optional


D I R E C T I O N S :
Prepare the marinade by mixing all the marinade ingredients, cover and place in the fridge for 2-3 hrs, or longer.

Prepare the fried onions by frying them in batches in hot oil until light golden brown. Set aside

In the same oil, fry the diced potatoes until golden brown and set aside.

To prepare the sauce, add the oil in a medium saucepan on medium heat. Add the whole spices, fry for a couple of mins and then add the blended tomatoes, garlic paste, ginger paste and the saffron. Stir and mix well for about 3-4 mins. Now add the marinated chicken and mix well. Now add the tomato paste and the fried potatoes, mix, cover and let it cook for 20-25 mins on medium-low heat, until chicken is cooked.

When the chicken is cooked, lightly hand crush the fried onions and add it to the sauce, mix well and turn OFF the stove. Add the cilantro and set aside.

To prepare the rice, parboil the rice with 4 cups of water, cinnamon sticks, cardamom pods, salt and oil. When the rice is almost cooked, strain the rice and give a gentle wash with cold water.

If using the food colouring, mix a pinch of food colour with a tsp of water and spread it on the rice. Cover and cook for an additional 5-6 mins on very low heat, until the rice is completely cooked.

Serve the biryani sauce over a plate of rice and enjoy!!
