A South African favourite with so many different ways to enjoy but this is one of our favourite. Simply seasoned and then braaied over hot coals before basting with a delicious apricot glaze. The end result is a smokey, caramelized, juicy, sweet, tender, flakey fish that will have everyone coming back for more.

Ingredients:

Protein:
Snoek

Seasoning:
Salt
Coarse black pepper

Basting:
Apricot jam (1/2 cup)
Garlic (2-4 cloves minced)
Butter (1/2 cup)
Birds eye chilli (1 chilli)
Fresh coriander (as much as you like)
Lemon (juice of one lemon)

Directions:
1.You will need to head out to your fish monger or super market to grab yourself a snoek and the rest of the ingredients for this recipe. It can be fresh or frozen, get whatever is available.
2. Lay your snoek down and season well with equal parts of salt and coarse black pepper and set aside while you get the fire going.
3. You will then add a pot or pan to the stove on medium heat and melt the butter then add the minced garlic and allow it to saute for a few minutes. Then add the chilli and allow it to do the same. Then add the lemon juice & apricot jam and drop to low heat and simmer for a few minutes. Add the fresh coriander, mix and remove from the heat. Set aside.
4. We are using our Firesmiths Hero Smoker for this cook and we set it up for direct cooking. We then threw out a full chimney of lit briquettes into the fire basket. We removed the grid of the Hero as we will be using a flip grid.
5. Once the coals are hot and the snoek is in the grid you can place it skin side down over the coals to allow it to cook from the bottom and crisp up the skin. This will take a few minutes before you would need to flip.
6. You can then baste the meat with that delicious basting sauce, once basted you can flip it over and allow it caramelize and add some smokey notes.
7. Once the snoek has reached internal temperature of around 55°C-60°C you can remove from the heat. After allowing it to cool slightly you can dig right in and start enjoying. A squeeze of lemon is optional but really adds even more flavour to this amazing recipe.

The 3-day event was scheduled for Feb 25 -27, 2022.
Feb 25-26, African fashion Week at 200 Kenny St, Winnipeg
The last day of the event, FEB 27 was at INFINITY ULTRALOUNGE, 279 Garry St, Winnipeg
The last day of the event is a celebration of talents and fashion designs. (THE AWARDS SHOW: WINNIPEG-MB TALENTS & FASHION AWARDS)

On February 27, 2022, AFRICAN FASHION WEEK WINNIPEG, INFINITY ULTRALOUNGE, MEAZA SPA & SALON awarded talents in Winnipeg from the entertainment, fashion, art, and music industries in Winnipeg/Manitoba.
This was a great event to showcase diversity in Winnipeg and celebrate Black history month.
