2.5 tablespoons of dry yeast/15g fresh yeast
3 tablespoons of plain flour(for the starter)
5 tablespoons of warm water
25g of melted butter
1 egg
1 cup of warm milk (about 220 ml)
50 g of castor sugar
1 teaspoon of salt

Cooking directions for Nigerian Donuts(doughnuts)
-In a bow, add the yeast and add 2 tablespoonful of flour, add a little water and mix. Leave for about 45 minutes to rise and begin to foam small bubbles in it.

-Into another bowl, add the remaining flour, add sugar and salt. Mix well
-Now add the egg , warm milk, melted butter and the yeast batter. Mix thoroughly for about 10 minutes, then fold the batter into a ball, place in a greased bowl and cover with a clean napkin or nylon.Tilt to one side and leave for about 1 hour until the dough doubles in size.

-Well the dough has risen, place on a floured table and flatten with your palms . Cut into doughnuts rounds. You can use biscuit cutter or the wide top of a glass cup.

-Now fry the donuts in your favorite cooking oil at 180 C for 2 minutes on each side. If you want very large donuts, you can leave it to rise for another 20 miutes before frying. Transfer into a sieve , lined with paper towels, to absorb excess oil.
