Hello everyone, so let me just say..the hype behind Jollof rice is really worth it. This is my first time having this dish and it's sooo amazing. With the tender chicken and spicy rice, i just can't get enough. I've made this recipe very easy for you to try it as well and I hope you make it for you and your family and I hope you enjoy!

Ingredients:
For the Chicken stock:
-1kg Chicken
-1 medium onion
-1tsp garlic, crushed
-1tsp ginger, crushed
-1tsp dry thyme
-3 cubes chicken bouillon
-1tsp salt
-3 cups water

For the tomato base
-3 large tomatoes
-2 red bell peppers
-5 garlic cloves
-3 inch ginger equivalent to 2tsp crushed ginger
-4 dry chillies or use 1 scotch bonnet(optional)
-1 large onion

For the rice:
-5 cups Basmati rice
-1 large onion
-5 tbsp tomato paste
-1 tbsp curry powder
-1 tsp dry thyme
-2 cubes chicken bouillon
-1 tsp salt
-unsalted butter
-4 cups water or more
