For the Oxtails

Ingredients

- Jollof Rice Stew
- Oxtails, 3 Per Person
- Bay Leaves, 1 for every two oxtails
- Allspice 1 tsp for every 6 oxtails

Directions
- Bag your clean oxtails with bay leaves and allspice
- Add the cold stew to the bag, it must be cold to vacuum seal well, if slow cooking you may skip cooling the stew
- Cook sous vide at 167ºF for 24 hours
- OR slow cook on low overnight or 12 hours

Clay Pot Method
- Fry the rice as instructed by Chef Onwuachi in a metal pan, I added a few pods of cardamom to the frying oil and rice
- When the rice has toasted add the rice at a 1cup to 3/4 cup rice/water ratio to the claypot
- Add 1 tsp of tomato paste for every cup of rice
- Add 1/2 cup of stew to the rice
- Mix and pot on the stove on high for 30 minutes, check after 20
- When the rice is done allow to rest and cool for 15 minutes to make escaping the bottom of the bowl easier
- Serve with oxtails and stew
