How to eat: Don’t skip the banana with a Somali meal
Somali food brings together traditions from across the world.

This is part of a weekly series in which reporter Aparita Bhandari explores how to eat the different cuisines that make up Toronto’s diverse culinary landscape.

When Los Angeles Times reporter Matt Pearce happened to partake in a traditional Somali meal while on assignment in Minneapolis in 2016, he made a bit of a foodie faux pas. When presented with a banana alongside his meal, he got confused and tweeted about getting a banana as an appetizer. The Twitter-verse soon set him straight — the banana is supposed to be eaten with the meal.

I had found myself in a similar situation a few summers ago. After interviewing a young Somali man about growing up in Toronto’s Dixon neighbourhood, I suggested we get a bite to eat. The meal arrived, with a banana on the side. “What are you supposed to do with the banana?” I asked my contact. He told me not to worry about it, and as he proceeded to eat his salmon and rice, without any banana, likely for my benefit. Out of politeness, I skipped the banana as well. But the question lingered in my mind.

I wanted to find out how you are supposed to incorporate the banana into the meal. So I called upon Bashir Munye, a Toronto chef whose approach to cooking is influenced by what he describes as his “Somali nomadic” experience.

The philosophy

“Culturally, Somalis are nomads. So we’ll eat some authentic Somali nomadic food,” says Bashir Munye, asking me to come to Istar Restaurant in Etobicoke. He says he likes Istar (pronounced is-turr) because it’s “a good quality takeout and Somali restaurant, with a beautiful hot table.

“They offer a variety of items, unlike other Somali restaurants in Toronto. For example, in most other restaurants, you get either rice dishes or injera. But at Istar, you also get cornmeal preparations.”

For our meal, Munye chose a traditional nomadic breakfast made up of soor (white cornmeal polenta-like dish made with vegetable stock or water), otka (sun-dried meat — beef, lamb, goat or camel — seasoned and preserved in ghee). “You have the vegetarian version of a breakfast with a dish called qudaar made of potatoes, spinach and carrots,” he said. Accompanying the meal, there was also bes bes (hot sauce) and a banana.

🥔 NAFAQO: Mix mashed potato mix with salt. Pour in water and continue mixing. Cut a hard boiled egg in half and coat it with a clump of mashed potatoes. Mold into a circle, forming a ball and place in an orange coloring mix. Fry the balls and enjoy!

🐟 FRIED TILAPIA: Score the fish and pour in Mama Wiilo’s secret sauce (including vinegar, hot sauce, saffron and gedo masala). Fry until golden brown.

🫖 SHAAH: Pour water into a teapot and bring to a boil. Pour in sugar, four scoops of black tea and nutmeg. Pour into a smaller container and add ginger and ground cardamom. Mix well. Pour back into a big tea pot. Pour tea through the strainer and then into a frothing cup. Add half and half and froth.

🐄 BEEF SAMBUSA WITH BASBAAS: Basbaas: Mix onions, jalapeños, lemon juice, cilantro, salt, garlic, black pepper and cook.| Folio (sambusa wrapper): In a mixing bowl, add water, flour, olive oil and salt. Take the dough and form balls then flatten. Rub oil on dough and stack. Press the dough to flatten. Cut the folio into four quadrants. | Beef (filling): Blend onions and mix with salt, ground cumin, ground coriander, crushed red pepper, and a dash of ground turmeric. In a big pot, add ground beef and brown it for 30 minutes. Drain the beef. In a big pot, sauté chopped white onions. Add the beef. Add the seasoning. Cook for a few more minutes. ASSEMBLE: take one quadrant and fold it into a cone shape. Stuff with beef and seal the edges.

🐐 WHOLE GOAT: Dry rub the outside of the goat using berbere, garlic powder, lemon pepper, cumin, nutmeg and crushed cardamom. Inside goat: Moist rub the inside of the goat with a mixture of garlic, soy sauce, lemon juice and bay leaves. Add in carrots, potatoes, celery and onions. Roast the goat for about 6 hours. Serve with Somali-style rice.

I've come back with Somali rice! You guys really loved this one during my Instagram Live cooking sessions a while back so it had to make it to Youtube! Tbh Don’t think I had a choice 😝 It really is an underdog in comparison to rice from other cultures and I love my Mum and sister for showing me that it literally takes 15 mins! Gosh I love it! Hope you enjoyed it too!

What I used:

1 cup rice (I like to use sella rice), parboiled (Cook until it is half cooked, so half the rice is clear and some is still white, for me it takes about 8 mins. This can differ)
1/2 onion, sliced (you can choose to use a whole one)
1/2 cup vegetable oil (about 8tbsp)
1 onion, diced
1 medium tomato, diced
Handful coriander, crushed
3-4 garlic cloves, crushed
1 chicken stock cube (I used Maggi brand, you can use 1 tbsp of the powdered version, you can substitute this for vegetable stock)
4-5 cardamom pods, (you can also use 1/4 teaspoon powdered cardamom)
1 cinnamon stick
1 tbsp ground cumin
1/4 tsp food colouring of your choice (turning it into a liquid or using the liquid versions work too)
1/4 cup raisins/sultanas, rinse in boiling water to soften
