Authentic Homemade Moroccan Chicken Tagine Easy Recipe

Ingredients:
1 chicken cut up, or 3 lbs. boneless chicken
1 tablespoon ground cumin
1 tablespoon paprika
1 tablespoon curry powder
2 teaspoons fresh ginger
1 teaspoon cayenne pepper
6 garlic cloves, pressed
1/2 cup chopped fresh parsley
2 lemons, zested and juiced
Red pepper flakes to taste
4 tablespoons all-purpose flour
5 Roma tomatoes, chopped
1/2 cup olives, of your choice
1 lb dried fruit, chopped, (can use dried apricots or fresh mandarins peeled and separated) nuts (almonds or favorite nuts)
1/4 cup olive oil
1 cup chicken stock
Minced onions
Salt and Pepper to taste
8 lemon wedges, to serve with

Directions:
Combine the cumin, paprika, ginger, curry, cayenne, garlic, parsley, lemon juice, zest and red pepper flakes.
Combine the chicken with the above mixture, and marinate for 20 minutes
Add the flour to the chicken mixture and toss well, then brown chicken in the olive oil. Remove the chicken and add the onions to brown in the remaining juices. Add the tomatoes, olives, lemon, red pepper flakes, nuts, dried fruit and stock to the pot, and chicken back in.
