In this video I share with you a simple pork wet fry recipe that is Kenyan Inspired.

Full Recipe: Pork Wet Fry Recipe
Serves 2
• 300g pork cubes
• 1 medium onion (chopped)
• *2 spring onions(whites for cooking/green for garnish)
• 3 garlic cloves (grated)
• 1 tsp ginger (grated)
• 2 large very ripe tomatoes (chopped)
• 2 tbsp soy light sauce
• 1 ½ tbsp oyster sauce
• 1 tbsp oil
• Black pepper to taste
• Pinch of salt about less ¼ a tsp ( very little cause we are using both soy + oyster sauce which are both salty)
• 1 small bunch of dhania

Method:
1. Heat Oil in a pan, add the pork cubes, season with salt + black pepper, stir and cover to simmer for the meat to steam and cook through about 10 minutes

2. While the meat is still steaming add the ginger and garlic, stir and continue to simmer the meat until all the liquid evaporates and fat renders in the pan/sufuaria

3. Stir in the red onions and whites of the spring onions to the pork which at this stage should be slightly turning brown, cover with the lid to sweat the onions for about 2 minutes or until they start to caramelize.

4. Deglaze the pan with the soy sauce and oyster sauce and keep stirring until the sticking bits at the bottom of the pan are no longer sticky (you can also add a dash of water to help with the deglazing)

5. Add your chopped tomatoes stir and cover to simmer for about 10minutes or until tomatoes are soft and sauce coats the pork.

6. In the last 3 or so minutes of cooking add some chopped capsicums cook for two minutes

7. In the last minute finish off by stirring in some freshly chopped dhania and the green parts of the spring onions.

8. Serve with your choice of starch.

P.s:
*I like to save a few dhania and spring onions to top has garnish as am eating the meal.
*If using medium tomatoes use about 3 of them.
*If you decide to add water please add very little about a tbsp. or 2 as the sauce should coat the meat.

Kenya has gained international fame for the Mau Mau resistance and for the concept of decolonizing the mind. Why then, are Kenyan institutions and the public so supportive of imperial and racist agendas? Is the problem lack of identity, as we are often told?

The answer in this video is that the problem is European liberalism, which has proved very versatile and illusive in dislodging from our minds, to the point of duping Kenyans that the European concept of ethnicity is synonymous with African culture and society.

The video is based on a conference presentation made at the Moi University inaugural conference on African studies in November 2023.

I see a lot of baby “wearing” these days which is nice

For Africans as a people, baby carrying has been our way of survival and growth too. “If she wasn’t carrying the baby she wasn’t working” is a saying that you would hear through and through because we sustained ourselves this way

As a Kenyan we are taught to baby carry at a very early age. I remember carrying our last born at the age of 9 years old myself. At 9 years old, my daughter is carrying my last born too

In Kenya we carry differently to how I have seen it taught actually even amongst African communities. Ours is crisscrossed as opposed to being worn horizontally

There is a saying that “African babies don’t cry” comes from the fact that even as mothers went in their duties after the 40 day rest, babies still had access to their mothers and the village at large and therefore was never left to cry or feel abandoned

I love baby wearing and have done with all my children. I carried my little one from 7 weeks old on my back because that is taught to us early in age and there is a reason why you start early and build it up

Africa is building American style highways to tame traffic jams choking the streets of its growing cities. Among the countries building Africa's best roads are Kenya, Ethiopia and Uganda. We take a road trip to check out the freeway action.

Among the biggest projects is the Nairobi Expressway, which is rising across the Kenyan capital and aims to speed past the jam and cut travel time to Jomo Kenyatta International Airport. We take a close look at this challenging construction project, which will change Nairobi.

Uganda recently received a big boost from the African Development Bank for its planned Kampala to Jinja expressway. This project seeks to cut travel time between these cities by 65 percent. Ethiopia also has embraced expressways to move its economy even faster.

While Chinese companies dominate road building across Africa, other countries are competing for a piece of the African road building opportunity, including South Korea and even America. One of these planned expressways in East Africa involves a legendary American company.

African strategists seek to connect this vast continent with a network of highways running east to west, north to south. America took decades to build a similar highway network linking what is basically a country the size of a continent.

While the road builders may not be American, the inspiration for Africa's fast new roads is the USA.

Ingredients
• 3 cobs of corn (cut into quarters)
• 1½ litres of water
• 1 teaspoon of salt (or to taste) for the corn
• 1/2 a teaspoon of turmeric (haldi)
• 4 tablespoons of plain yogurt
• 2 tablespoons of besan (gram flour)
• 1 teaspoon of salt (or to taste) for the gravy
• ½ a teaspoon of red chilli powder
• ½ a teaspoon of garam masala
• 1 pint of water
• 2 tablespoons of cooking oil
• 4-5 curry leaves
• ½ a teaspoon of cumin seeds (zeera)
• ½ a teaspoon of mustard seeds (rai)
• 3 tablespoons of imli (tamarind sauce)
• ½ a teaspoon of black pepper
• 300 ml of coconut milk
• A handful of fresh coriander
• 3-4 green chillies (optional)

Here is a new short from my cycling adventures in East Africa.
Here is few news from me:
Now i am back in Finland and getting ready for the next adventure. i want to say huge thanks for all of you and Matilda for the support regarding the broken Laptop, Matilda managed to fix it and now i can work on the videos.
New vlogs:
i am working on the videos and new vlogs and review videos will be published

Update about Matilda:
The most important update is she is doing well. there will be full update regarding her on the upcoming vlog. but shortly here i want to let you know she won't be with Nomadstrail's any more. i understand this is disappointing for all of you but as i mentioned the most important thing for me and her is he happiness. But Nomadstrail's is always Matilda's home so any time in the future if she wants to come and say hi she will. but full update in the next vlog.

while i am editing the vlogs and review videos i also have a serious of shorts from East Africa so i will keep publishing those also for you from now on.

Time line of vlogs:
The next vlog will be the story telling style of vlogs from my adventures in East Africa. but after this vlog i will take the time line back to the last summer and i will edit the proper vlogs from last summer till now. Before my next adventure starts i will try my best to match the timeline of my current adventures and youtube vlogs.
