Most South African households have pap as a staple and we can’t deny that there are many ways to make pap. This is one of the versions, simple, quick and lump free.

I used
4 cups of water- boiled
Mix 2 cups of maize meal and 2 cups of cold water
Add 1 more cup of water and lower the stove ( when the water starts boiling)
Add the maize meal mixture into the pan and gently mix- use a whisk if it gets lumpy.
Let it simmer with the lid on for 10 minutes on low heat. 
Add 1 cup of maize meal and mix until there are no lumps.
Let it simmer for 5 minutes
Turn the pap and simmer again for 5 minutes
Serve- use a cup or bowl to mold the pap

Amagwinya also known as "Vetkoek" is a delightful Zulu food commonly enjoyed either as breakfast or main course in South Africa. Also commonly called Puff-Puff or fat cakes and one of the most popular street foods in Africa. What is Amagwinya? This is a Zulu name that translates to fat cakes or fried dough balls. The name ‘Magwinya’ is a term that originated from South African townships. The delicacy is said to have its origins from the Dutch. Do you want to know how to make Magwinya soft?

Ingredients:

2 cups all-purpose flour
3 to 4 tablespoon of sugar
1/2 tablespoon of salt
2 tsp Yeast (Instant)
1 cup of warm water
2 tablespoon cooking oil

Preparation:

Mix flour, yeast, sugar and salt.
Add about a cup of water and oil first, then mix, keep adding water a little at a time until mixture becomes a dough.
Knead 10 minutes until smooth.
Put in bowl, cover and leave to rise until doubled.
Divide dough into even pieces, the shape into circles.
Heat oil and then fry the dough balls until golden brown.
Put it into clean pot and serve the delicious amagwinya.

The word vetkoek literally means "fat cake" in Afrikaans. These fried treats are one of South Africa’s most treasured foods. Essentially a kind of doughnut, amagwinya is traditionally made with a yeasty bread dough that is shaped into balls (sometimes flattened slightly) before being fried in hot oil until golden brown and slightly swollen, with a soft, bread-like centre – heaven!

This recipe is based on feeding a family of 4 to 6
For the marinated Chicken:
# Chicken Legs and Chicken pieces about 2kg
# 2 tbsp of ground black peppercorns
# 2 tbsp garlic powder
#2 tbsp ginger powder
# 2 tbsp dried oregano
# 1 tbsp Knorr Aromat seasoning
#Juice of 1 Lime
# cooking oil to help mix the ingredients

quantity of the onions and seasoning to marinate the onions:
4 large white onions and 2 medium-size red onions
#4 tbsp of mustard
#1 tbsp ground black peppercorns
#some salt to taste
#oil for mixing ingredients

Ingredients for the Side sauce:
#1 green chilli
#handful of fresh parsley
#1 red scotch bonnet pepper
#1 medium white onion
#Juice of 1 Lime
#1 green bell pepper
#some oil
#salt to taste
#water to help blend the ingredients

Ingredients:
For the meat mixture:
2 tablespoons Oil
1 Onion, chopped
2 Garlic cloves, crushed
2 small Carrots or 1 large, grated
4 Bay leaves
500g Ground beef
1 teaspoon Turmeric
1 teaspoon Curry powder
Salt to taste
Pepper to taste
1 teaspoon Cumin
2 tablespoons Chutney/apricot jam
2 slices White bread, crusts removed
1 cup (240ml) Milk
For the topping:
1/2 cup (120ml) Milk
2 Eggs
Salt to taste
Pepper taste

Directions:
1. Preheat oven to 350F (180C).
2. Soak the bread in milk and set aside.
3. In a large pan or skillet heat oil, add chopped onion and sauté for 4-5 minutes. Add garlic and sauté for 1 minute. Add grated carrot and cook for 3-4 minutes. Add turmeric, curry powder, cumin and cook for 1 minute.
4. Add the beef, cook the ground beef until it is no longer pink, stirring occasionally. Add the chutney and stir. Add 1/2 cup of water (or beef broth) and simmer for 5-10 minutes.
5. Squeeze the milk from the bread, reserving the milk for later. Add the bread to the meat mixture and mix well.
6. Spread the mixture evenly into an oven proof dish.
7. To the remaining milk add another 1/2 cup of milk, add 2 eggs, salt and pepper. Whisk until combined. Pour over the meat mixture and arrange bay leaves on top.
8. Bake for 30-35 minutes or until golden and egg layer is set.

Guiglo, Côte d’Ivoire (Ivory Coast) - After making our way along the Atlantic coast of Côte d’Ivoire, we’re continuing our Ivorian food tour to the north, stopping first for an extraordinary meal in Guiglo, before we continue all the way to Northern Ivory Coast, eating as much local food as we can along the way.

In Guiglo, Côte d’Ivoire we met with the Guéré tribe and Madam cooked us an absolutely incredible meat called Sauce Bawin (cassava leaves sauce) and Sauce Kplé Ba (sticky sauce) - a meal fit for West African royalty! It was impressive and the flavors were unbelievable.

We continued our journey to Touba and to an extremely remote village called Gboola. In Gboola we saw one of the most mysterious and fascinating dances I’ve ever scene, the Ivorian stilt dances. We then had lunch with the community.

Finally to complete this cay we drove to Odienne, in the very northern part of Côte d’Ivoire. There we had some Gnomi (griddle cakes) and a huge meal of Sumbala La-fri - Rice made with eggplant and locust beans.

It was another incredible day of local West African food in Côte d’Ivoire (Ivory Coast)!

What is rice pilau?

Rice pilau is a fragrant tasty one-pot dish made with caramelized beef with rice and potato cooked in a rich and delicious meat or chicken broth.
what makes pilau brown?

The brown color of the pilau comes from caramelizing the onions, browning the meat until it becomes really browned.
The pilau seasoning or pilau masala also adds a bit of color to the rice as well as a unique flavor.
East African Pilau is a traditional, beautiful fragrant rice dish made with many aromatic spices that adds an amazing depth of flavor to the rice. It can be made with either beef or chicken.
PILAU

Pilau has a wonderful balance of flavors. It is a festive dish, which is never missing during special occasions or events. It’s made with rice cooked in a well-seasoned broth of Meat or chicken. Unlike the Indian pilau, the East African version does not use curry and it’s less spicy.

Rice is, without a doubt, one of my favorite food in the world. Not only is it my to-go dish when I need to prepare a quick meal, but it can easily be turned into an elegant dish for special occasions.

With the right combination of spices, plain rice can be turned into the main attraction like this Rice Pilau or the West African jollof rice, my go-to one-pot chicken and rice, and much more!

Pelau is delicious on its own and can be served as a stand-alone meal, however, if you want a full Kenyan experience simply pair with Kachumbari – a cool and refreshing salad made with tomatoes, red onions, cilantro and a spicy pepper like serrano chili pepper.
HOW TO MAKE THE EAST AFRICAN RICE PILAU

Toast and blend the pilau masala: In a medium saucepan over medium heat.
Brown the onions by frying it in oil until it caramelizes. This should take about 10 to 15 minutes. Stir in the Garlic, ginger and serrano pepper.
Add the meat stock cubes, pilau masala, cilantro, bay leaves, and salt to taste and brown the meat for about
Stir in the tomatoes and cook till it dissolves. Then stir in the potatoes.
Add water and bring everything to a rolling boil and leave the potatoes to cook for about 10 minutes.
Stir in the rice then cover tightly. You can use an aluminum foil to cover it first, this will help keep the steam in. Then place the lid over it and leave to cook on a low heat for 20 minutes until the liquid has been absorbed.
Serve hot! You can sprinkle the rice pilaf with some chopped cilantro, then fluff with a fork. Enjoy.

Notes:

I used beef in this recipe, but chicken or any other type of meat can also be used.
I used basmati rice which takes about 20 minutes to cook however, your cooking time may vary depending on the type of rice you use.
For even cooking, I seal my pot with aluminum foil during the cooking process so as to have well-separated rice grains after cooking.
It’s also best to cook on low heat.
I love to use freshly ground spices that’s why I choose to grind my spices myself it imparts so much flavor!
