African Fashion International (AFI) is the leading Fashion authority on the African continent and is committed to the promotion and development of the best South African design talent. African Fashion International achieves this through creating leading, world-class platforms aimed at driving the growth of the industry and the support of talented designers. AFI also strive to lead the way in thought leadership that champions understanding of the opportunities, challenges and growth potential of African fashion/ This is achieved through AFI's three pillars:

1. Events/Properties
MBFW Joburg is AFI's Autumn/Winter fashion platform, showcasing the best of local esign talent. It takes place annually in February/March. MBFW Cape Town is AFI's Spring/Summer fashion platform, which takes place annually in July/August. MBFW Africa is a trans-seasonal showcase, which takes place annually in October and provides a platform for premier African and heritage designers to present their fashion businesses to global markets. Africa Fashion Awards celebrates and recognises the successes of the African fashion industry at a gala event each year.

2. Development
AFI Fastrack™ is the national graduate fashion platform offered by AFI. The initiative is a developmental platform that offers emerging designers a chance to be exposed to the market though the fashion week vehicle. It provides growth opportunities to participating designers through seminars, workshops and career education. AFI The Next Generation is the second-phase development platform. It offers graduates from the AFI Fastrack program an opportunity to further their fashion businesses through continued growth opportunities such as mentoring.

3. Business
AFI Showroom is a retail opportunity offered to designers. The Showroom brings the designer and their clothing together with a potential consumer market -- the tagline is "Shop the Shows" because the platform allows shoppers to buy garments that they have seen on the runway. Africa Fashion Trade Expo is also a retail opportunity offered to designers from the continent to interact with a local South African and the global market. Designers also use this opportunity to present their brands to buyers and the media. Seminars: AFI hosts fashion and business related seminars to ensure the continued growth and development of the local industry.

Braised Venison is more on the dryer side as compared to the typical curry.

This is one of my favourite dishes that my mum & late grandmother used to prepare for me. Venison is also known as the meat of the buck or deer, it's a game meat & often there are different ways to cook it to get rid of the gaminess - I recommend freezing it, defrosting & then preparing it.

They always cooked this type of meat in this way, although you may cook it as a normal curry if preferred. If you haven't tried Braised Venison as yet, I highly recommend that you do.

The key to this dish is not to add in any water. There is a sufficient amount of vegetable oil incorporated in this recipe & Venison usually has a lot of water which will ensure that everything cooks well without any water being added. Peas can also be added if preparing it this way but I ain't a lover of peas so I'm skipping that.

Braised Venison Ingredients:
◆1kg Venison
◆3 tablespoons vegetable oil
◆1 onion
◆1 tomato
◆few sprigs thyme
◆2 teaspoons ginger & garlic paste
◆2 green chilies
◆1 star aniseed
◆2 bay leaves
◆1 cinnamon stick
◆½ teaspoon cumin (jeera) seeds
◆½ teaspoon fennel (soomph) seeds
◆2 teaspoons garam masala
◆1 teaspoon cumin (jeera) powder
◆2 teaspoons coriander (dhania) powder
◆½ teaspoon turmeric powder
◆½ teaspoon cardamom (elachi) powder
◆3 tablespoons chili powder or masala
◆salt to taste
◆1 sprig curry leaves
◆¼ cup fresh coriander (dhania)
◆¼ cup fresh mint
◆freshly chopped coriander (dhania) for garnishing

Braised Herbs With Potatoes has been a favorite since our ancestors time. I remember this dish being my grans absolute go to meal any time of day & it is because of her that I love herbs so much.

Not many people would choose this dish but herbs have a lot of nutrients & you will grow to enjoy it.

This dish may use various herbs. I have used Spinach. Spinach is a high yielding assortment with dark green crinkled leaves & expansive white stems. The stems are also edible.

You may also use Silverbeet or Chard herbs. Chard is a leafy green vegetable regularly utilized as a part of Mediterranean cooking. In the Flavescens-Group-cultivars, the leaf stalks are expansive & are frequently prepared separately from the leaf blade. The leaf blade can be green or reddish in shading; the leaf stalks likewise differ in shading, generally white, yellow, or red.

Traditional South African Trifle

In my family Christmas wouldn’t be Christmas if we didn’t end our feast off with a traditional Trifle. A big bowl that is often devoured for a couple days.

So let me share how we make this simple and easy classic Trifle.

Based on the bowel you will be using, you will need to adjust your recipe. For this traditional simple trifle you will need, a soft sponge cake, preferably madeira or a plain vanilla sponge. You will also need, a tin of peaches. Should you choose to use fresh peaches, make sure you have a sugar syrup as well. Store bought works the best. You will also need some jelly and custard, some fresh cream and for the topping, chocolate or nuts or even both.

When you talk about the cuisine of South Africa, a culturally and ethnically diverse country with no less than 11 official languages, Durban curry comes up in the first breath. Maybe that's not surprising, necessarily. Durban is a mini-India, outside India - But the Durban curry is an anomaly—loved fiercely by locals and rarely so by Indians from India, feared by those unfamiliar with the complex layers of spices, the glossy sea of orange-tinged oil that floats to the top, the flavor profile that can be described as linear and unrelenting—it burns from the moment it hits your tongue.
While the recipes and ingredients differ from family to family, broadly, Durban curry has a deep-red color indicative of the spice level (hot, hot, hot), a slick of oil, and, if it’s not a fish curry, large chunks of soft potatoes—known as "Up-To-Date" or “gravy soakers.”
How the Durban curry got here to Durban in the South African province of Kwazulu Natal and why it manifests the way it does is a story of survival of the indentured Indians who arrived by steam ships between 1860 and 1911 to work on the British-owned sugar cane plantations. This curry tells of adaptation to the terrain and available ingredients—and it’s not short on mystery, sparking its fair share of urban legends.
Laborers escaping harsh economic and social conditions in India left through the ports of the south and soon found themselves toiling in the sugar cane plantations and railway stations, living in conditions akin to slavery. In spite of the challenges faced in this foreign land—beatings and worse for minor transgressions and an understandably strained relationship with the indigenous Zulus who refused to acquiesce to British demands—they clung onto their religions and their food culture. Perhaps they considered it a small price to pay for a different hell they left behind - Other passenger or “free” Indians who chose to work in South Africa also maintained close relations with the motherland, traveling often to see family and to bring back spices, seeds and vegetable matter. They set up small establishments selling spices, or traveling door-to-door supplying vegetables from local farms.BUT majority of Indians, unlike others became stuck in time without the ability to travel home. “We need to understand that [they] had no access or means to go back and forth. So, over time they developed their own style of cooking curry. It has its own distinct taste.”
As a result, Durban curry has tasted the same for generations, morphing slightly only in the last decade with the need to cut back on the masala, oil, and ghee used (the incidence of digestion complications, high cholesterol and diabetes is high among Indians). Despite cutting back on the richness in homes and restaurants around Durban, you can still find a few restaurants that make it in the time-honored way - While some answers may be lost for all time, Durban curry remains locked in time and place at the cafés and tea rooms in the Old Indian Quarter, along the beachfront and in the suburban eateries, where fingers and a sense of nostalgia are all you need to enjoy it.
