Ghanaian style fried chicken presents well on any dining table with a juiciness and light crunch that’s delightful. It is common practice, in Ghana, to marinade the clean chicken pieces first, then partially cook to force the flavours of the marinade into the chicken prior to frying. These golden brown fried chicken will pair well with dishes, such as fried rice, jollof rice, fried or baked potatoes, fried Ghanaian yams, and often found also in deeply flavoured tomato based stews. INGREDIENTS:
* 4 lbs chicken drums, thighs, and wings (dark meat)
* Vegetable oil for deep frying
* 1 thumb size ginger
* 1 large onion
* 1 tsp dry or fresh thyme
* 1 tsp dry chili flakes
* 3 small bay leaves
* 1 sprig fresh rosemary or 1 tsp dry
* 2 habanero chilis (optional)
* salt to taste
* 1 tsp all purpose seasoning or 1 chicken
stock cube)
* salt to taste
* 4 cloves garlic
* 1/4 tsp each fennel seeds & aniseed
* 1/2 tsp crushed black pepper
Breading Ingredients:
* 1/2 cup all purpose flour
* 1/2 cup all corn starch
* salt to taste
* 1/4 tsp crushed chicken stock cube
