4 Cups Rice
2 Red Bell Peppers (Tatashe)
1 Can of Plum Tomatoes/ 5 Medium Size Tomatoes
3 Chilli Peppers (Shombo)
2 Paprika Peppers
2 Scotch Bonnet (Ata Rodo)
1 cup Beef or Chicken Stock
120g Tomato Paste
2 Onions
150ml Cooking oil
4 Tbsp Butter
3cm Ginger Root
2 tbsp Curry powder and Thyme
Bouillon cubes
1.5 tbsp White pepper
3 Bay Leaves
1 Medium Size Tomato for Garnishing
1 Small Onion for Garnishing
Salt to Taste

Lets cook a very simple and tasty recipe from Africa. We cook green unripe bananas (matoke) together with potatoes and boiled beef. Matoke is a variety of banana from a family of bananas known as East African Highland bananas. Matoke is sometimes referred to as plantains. Make sure to place the bananas in salted water immediately after peeling to avoid discoloration. Hope you will enjoy.

Top 10 African Dishes That You Must Try
Ugali. This is widely enjoyed in East Africa; Kenya, Uganda, Tanzania, Rwanda and the neighboring communities. It's a meal made out of maize flour that is mixed into hot boiling water and then mingled to form a solidified food called Ugali or posho. Ugali is usually served with Sukuma wichi, beef, chicken and beans.
Injera. This is widely enjoyed in Ethiopia and Eritrean communities. The meal is made out of Teff a tiny round grain that grows both in the Ethiopian and Eritrean highlands. On making Injera, yeast is also added and it is poured onto the pan. Trust me if you visit an Ethiopian or Eritrean home, then you'll be served with Injera
Fufu. This type of dish is widely enjoyed in West Africa in countries such as; Ghana, Sierra Leone, Central African Republic, Guinea, Liberia, Ivory Coast, Benin, Togo, Nigeria, DR. Congo & Congo Brazaville, Cameroon, Angola and Gabon. Fufu is a dough-like meal that's made from fresh or fermented cassava. The cassava is pounded together with plantains to form the Fufu dish.
Matooke. This is an East African dish that's widely enjoyed in Uganda, Kenya, Tanzania, Rwanda and Democratic Republic of The Congo. The bananas are peeled and left to boil in a pan for some minuted and later served. Matooke can be served with sauce such as; Beef, Chicken or Ground nut or peanuts.
Garri. This is a dish enjoyed in Nigeria (West Africa). It's prepared using granulated cassava which is first peeled and then cooked. This cassava is left to ferment for some days and this is what usually determines the color of the Garri. This meal compares to an ordinary cereal you have for breakfast.
Couscous. This type of dish is very popular in the Northern part of the African continent in countries like; Morocco, Algeria, Tunisia, Libya, Egypt, Mali, Niger and Mauritania. It's a traditional Berber dish that contains granules of durrum wheat which is prepared by steaming. It's a very healthy meal I must say. Like Rice, Couscous can take up any flavours added to it for the liking of the person preparing it.
Jollof Rice. This is a West African dish very popular in countries like Ghana, Nigeria, Sierra Leone, Liberia, Cameroon, Senegal, Gambia, Togo and Ivory Coast. As you move from country to country, you'll notice a slight variation in taste but it remain Jollof rice. The meal is made using rice that is mixed with vegetables and then later boiled at medium-low heat (temperature) for 20-30 minutes. Jollof rice is usually served with chicken, turkey, beef, goats meat or fish with salads.
Mealie Pap.
Chapati. This is an East African delicacy enjoyed in Uganda, Kenya, Tanzania and other communities around the region. Adough is made out of wheat and vegetables which is later fried on a pan to make chapati.
Tuwo.

INGREDIENTS: Egusi soup-:
* 6 each, chicken drums and thighs - cleaned with lemon juice
* 1/2 tsp Granulated garlic
* 1/4 tsp cayenne pepper (optional)
* 1 tsp salt & 1/2 tsp black pepper
* 1/2 tsp paprika
* 1/2 tsp granulated onion
* 1 chicken bouillon/stock cube
* 1 Tbsp olive oil & extra for oven grilling chicken
*** oven grill chicken with ingredients above for 12 minutes with broil option ***
* 1 large onion chopped
* 1/2 Tbsp garlic paste
* 1 Tbsp ginger paste
* 1/2 cup smoked herrings for authentic egusi soup flavour
* 2 habanero chilis (leave one with head on & split other open to release its heat)
* 2 small red bell peppers (seeded and blended)
* 4 vine tomatoes seeded (seeded and blended)
*** transfer grilled chicken with its juices into cooking pot, and add the ingredients above, and cook on medium heat with lid on, for 10 mins till a vigorous boil is reached ***
* 3 cups pumpkin seeds AKA egusi/pepitas
* 1/2 cup vegetable broth (optional)
* Blend egusi with water. Enough to be above egusi at 1 inch level (approximately 2 & 1/2 cups)
* Add 1/2 cup extra water from rinsing blender
*** Add blended egusi to the pot. Cook on gentle/low heat with lid on for 15 minutes. Stir after 15 mins and cook a further 10-12 mins with lid off stirring periodically. When oil has resettled on top of the sauce, it indicates, egusi is cooked. Add ingredients below, and fold in, cook for a further 5 mins and serve ***
* Add green leafy vegetable of choice (I used 3 cups of chopped kale)
* Add 2/3 cup palm oil for an authentic egusi flavour
INGREDIENTS: Fufu :-
* 1 & 1/2 cups fufu flour
* 3 cups water
* extra hot water for steaming, and a softening fufu to your preference

Coriander Seeds<br />1 tsp. Fennel Seeds<br />1 tsp. Cumin Powder<br />½ cup Olive Oil<br />½ tsp. Salt<br /><br />1 whole Chicken cut into 8 pieces<br />Salt, as required<br />2 tbsp. Lemon juice<br />3 tbsp. Harissa paste<br /><br />1 tsp. Olive oil or vegetable oil for frying<br /><br />Mint leaves for garnish<br /><br />Method:-<br />- Grind the soaked red chillies in a mixer/grinder to a coarse paste by adding lightly roasted coriander seeds and fennel seeds followed by cumin seed powder and garlic.<br />- Add olive oil, salt and make smooth paste. Transfer to a clean paste.<br />- In a bowl mix 2 tbsp. Harissa paste with chicken followed by salt, lemon juice and mix well.<br />- Marinate for a minimum of 30 minutes or a maximum overnight.<br />- Heat oil in a pan and place the marinated chicken in it and sear on a high flame.<br />- Baste the chicken pieces with the leftover oil from the marination.<br />- Cook evenly on all sides for 20 minutes.<br />- Turn the heat off and serve by garnishing with mint leaves and lemon.<br /><br />Harissa Chicken is ready to eat!<br />
