The Cape Verde islands are a lovely tropical getaway because of their 24° to 30°C average annual temperature range. -1 package of Chourico⁣
-1 package of smoked pork neckbones⁣
-Beef brisket⁣ or boneless beef ribs
⁣ ⁣

✨Veggies✨⁣

-1 Bag shredded collard greens⁣
-1-2 Yuca (optional)⁣
-Butternut Squash cut in large pieces(optional) ⁣
-1 Carrot Diced (optional)⁣
-1 Sweet potato diced (optional) ⁣
-1 Large Onion Sliced⁣

⁣ ⁣
✨Seasonings✨⁣

-Minced Garlic⁣
-Olive Oil⁣
-Salt⁣
-Black Pepper⁣
-Red Pepper Flakes (Optional)⁣

-Adobo or any other All-Purpose Seasoning⁣
-Bay Leaf⁣
-Tomato Paste⁣

✨FYI✨⁣
- Smoked Pork Neck-bones can be found at most grocery stores. Market Basket or Stop & Shop⁣

- Beef Brisket was found at Star Market. This can also be found at BJ’s. I seasoned all of the meat but only used half in my Cachupa. I froze the other half for next time. Use as much or as little as you please. ⁣

- Veggies are optional. Add what you like!⁣
Plenty of people prefer no vegetables except collard greens⁣

-If you don’t have a pressure cooker. Follow the same steps and use a pot to pre-cook your corn & beans separately. It may take about 1.5-2hours for your dried corn & beans to cook⁣

-To preserve your Cachupa - you can drain the excess liquid/sauce after it’s cooked & cooled using a strainer. You can remove your large veggies if you want & freeze in portioned baggies! Thaw out in fridge the night before & enjoy the next day with a fried egg!

Think back 10 years ago. Had you heard of Cape Verde? Not quite African and not quite Portuguese, a vibrant mix of both worlds. The islands of Cape Verde are as beautiful as they are mysterious. It was the transatlantic slave trades that put these islands on the map and ten years ago, TUI put them on the tourist trail and the industry boomed. It's no surprise but the constant beat of traditional music, turquoise seas, sandy beaches, world-class surf and surreal lunar landscapes. I've been given the opportunity to travel 2,700 miles across the Atlantic to visit Sal, an island steeped in history and natural wonders, where suddenly there are more tourists than locals. I want to engage with its people, absorb its unique culture and at this most critical time in our planet's history, dig deeper into the reality of tourism and learn how we as tourists can improve the way we travel to ensure a sustainable future for an industry we all love. We've been guided along the way by two amazing charities; the TUI Care Foundation and the Travel Foundation who work closely with local businesses and hotels. This trip was to become one of the biggest eyeopeners of my travels to date. So let's go back to the beginning. At Holiday Extras we believe in making simple choices to improve the way we travel, to find solutions that benefit the environment and lessen our negative impact on a destination so our journey began in an airport lounge at Gatwick, ideal if you're trying to avoid buying plastic whilst filling up on delicious food before your flight. We chose to fly direct to Sal with TUI Airways, the world's most carbon efficient airline. And upon landing we were met by our prefect transfer driver who took us straight to our greener hotel on the southwest coast of the island. So we're starting our day having breakfast with a view. It kind of reminds me of what the moon would look like. It's very rocky but that view is just gorgeous and we're not wasting any time, we're starting today with an island tour and this is with the company called Explore CV, and I'm really looking forward to seeing what today has an offer. Booking an excursion on a trip can be the highlight of any holiday but we want to emphasize the importance of finding a responsible tour company. Explore Cape Verde were recommended to us by the Travel Foundation for being passionate about the island's wildlife, whilst providing eco-conscious excursions. We booked on an island tour and our tour guide Jordi was a knowledgeable marine biologist. The tour started in the coastal town of Santa Maria at the fishing pier which is the soul of the island. Jordi showed us around and explained that the fisherman returned around 11:00 a.m. every morning to their wives who are waiting at the pier ready to sell the catch. If it's the locals fisherman's it is a sustainable fishing we also sell the rights for the European Union to fish here in Cape Verdean waters. Cape Verde got its independence in 1975. As a former Portuguese colony, they absorbed the Portuguese influence and their blood. Mixed with the Africans who settled here, essentially created their own race Creole. It's like cultural to jump from the pier. If you come here and you didn't jump you cannot say that you've been in Sal. The no stress lifestyle here it seems the whole time. Next up we visited a natural reef, a popular feeding area for lemon sharks and a place for tourists to safely see them in the wild. You can rent water shoes to protect your feet from the rocks and carefully wade in to watch them hunt. Jordi's care and consideration for the sharks was very clear, insisting we keep a fair distance as not to disturb them. Other guides let their groups go as far as they wanted, some even chased the curious parts which reminded me of the importance of booking with a responsible company.

I'm no Anthony Bourdain, but this episode has some of his style because it is about discovering Cape Verde through food, drink, music and its people. My journey is about discovery. And here we discover a side of Cape Verde that is real. Some may say this is not about sailing. It is not. It's about travelling.

It looks like the restrictions due to the pandemic are going to be lifted soon. So where do we want to go. West Africa is where. Senegal, The Gambia and The Bijagos Islands in Guinea Bissau. But we'll have to wait. And I'm not the only one to wait. There are three beautiful large sailing vessels waiting. Each with their own story. And we'll have to celebrate one important event. Lily's birthday. It's a full out party as we're fixin' for a celebration Cabo Verde style.Sailing Galopin in Cabo Verde Africa.

We show you how to make Cape Vedean Pastels. A crunch, tasty snack made with canned tuna, onions, herbs and spices, then wrapped in empanada dough and fried to a golden crisp. These are delicious and easy to make. Perfect for parties or as an appetizer, these are a traditional favorite from Cabo Verde. Think of them as Portuguese style, or Cape Verdean style Tuna Empanada.

Travel video about destination Cabo Verde.
Cape Verde is an exotic island world, an archipelago off the coast of West Africa it combines the flair of the Canaries with the charm of Africa. Explorers Christopher Columbus and Vasco Ad Gama lay anchor there in order to replenish supplies and repair their ships. It was not until 1445 that the fifteen islands were discovered and consequently became a Portuguese colony. We begin in the north east of the islands, in Sal. Crystal blue sea and endless sandy beaches, islands of both wind and sunshine with a volcanic lunar landscape twenty five kilometres long and twelve kilometres wide. Sal owes its name and colonization to its once most important export of salt which was to be found in huge quantities. Baia Da Fontana, close to Palmeira, appears like a shady oasis with various green trees that provide welcome shelter from the heat and in the background the dominant Monte Leste volcano where the slopes reach down to the shore and the splendid rock pools of Buracona. Mindelo, situated on the island São Vicente, is considered to be the cultural centre of the archipelago in which typical Creole art has been preserved. Sparse, raw and untamed it is dominated by powerful, almost mystical mountains. Santo Antão is an island of mountains, wind and water and the second largest island of Cape Verde. Its most important route is a road over the high mountains. The views of the Paúl Valley take the breath away. A fairytale world of stone which looks truly surreal. Against the background of the scenery, clouds entangle themselves within the mountains and provide life-giving moisture. Each island is unique and possesses its own special charm. Cabo Verde - islands full of light and joie de vivre!
